Baked Tilapia, broccoli, blue corn bread.
Tilapia: Salt and pepper both sides of the fish. Cut lemon slices and arrange on top. Bake uncovered in a greased pan at 375F for 18-20 min.
Blue corn bread: 1 cup blue corn meal, 1/2 cup flour, 1 and 1/2 tsp baking powder, 1/4 tsp salt.
1 Tbs honey, 1 egg, 1 cup milk. Combine and mix dry ingredients. Mix wet ingredients. Add wet to dry and mix. Bake at 425F for 15-20 min in a greased pan or muffin cups.
I won't make J eat Broccoli, but I do occasionally suggest that since he's an adult he can eat it.
