Blueberry Oatmeal Bars

Blueberry Oatmeal Bars
1 and 1/2 cup flour
1 and 1/2 cup oats
1/3 cup sugar
1/3 cup brown sugar
1/4 tsp baking soda
1/4 tsp salt.
Mix dry ingredients together.
Add 1 and 1/2 stick (12 Tbs) melted butter and stir together.
Line a pan with tin foil and either butter and cooking spray. Pat down 2/3 of oatmeal mixture into the pan. Bake 375F for 20 - 30 min until golden.
Blueberry filling
1 and 1/2 cup blue berries
2 Tbs lemon juice
1/4 cup sugar
1/2 cup blue berry jam
Mix together in a sauce pan on low - medium heat until bubbly and set aside. Adjust sugar and lemon juice to taste.
Pour Blue berry filling over baked oatmeal crust. Add remaining 1/3 of oatmeal mixture on top (if you haven't eaten it all which I almost did). Bake another 20 - 30 min at 375F until golden on top and blueberries are bubbling out the sides. Let cool (Except at my house where we don't wait for anything to cool) and cut into bars. Best served warm with ice cream.

A Perfect Breakfast

This is what I did for President's Day Monday. Swiss Miss Hot Chocolate with mini marshmallows and an Orange Pillsbury Sweetroll. It was about 2 pm in the afternoon because I did not get out of bed until 1 pm. I have chocolate milk for blood. It has taken years to slowly replace my real blood with chocolate, but I managed to do it by drinking hot chocolate or chocolate milk every day since I was 10. This might also explain why my cholesterol is so high. It is a side-effect of having chocolate blood that I am willing to accept.

Tilapia

Baked Tilapia, broccoli, blue corn bread.

Tilapia: Salt and pepper both sides of the fish. Cut lemon slices and arrange on top. Bake uncovered in a greased pan at 375F for 18-20 min.

Blue corn bread: 1 cup blue corn meal, 1/2 cup flour, 1 and 1/2 tsp baking powder, 1/4 tsp salt.
1 Tbs honey, 1 egg, 1 cup milk. Combine and mix dry ingredients. Mix wet ingredients. Add wet to dry and mix. Bake at 425F for 15-20 min in a greased pan or muffin cups.

I won't make J eat Broccoli, but I do occasionally suggest that since he's an adult he can eat it.

Moco Loco

Comfort food at its best. Moco Loco. This is a traditional Hawaiian dish. I picked it up from watching Food Network. J loves it. It is good stick to your ribs easy to make man food.

Valentine's Cupcakes

For Valentine's Day I decided to deviate from the traditional pink, red, and white and went with blue and violet. Chocolate cupcakes with chocolate frosting with chocolate hearts. I was so excited to find lavendar candy melts at JoAnn's this weekend I had to do something with them.

Chocolate cupcakes
1 and 2/3 cup sugar - always the best ingredient to start with.
3/4 cup melty butter
2 eggs
1 tsp vanilla
1 cup cake flour
2/3 cup cocoa powder
1/4 tsp baking powder
1/2 tsp baking soda
1 and 1/2 cup milk
Bake 350 F for 18 - 20 minutes. Decorate.

Cookie Cups

This is my attempt to make chocolate chip cookie bowls with chocolate mousse filling for my company party last Friday. On the table are all my ingredients, except flour, because I forgot to add flour to the picture when I took it. I'm a novice at this food blogging thing.

This is my 1978 Betty Crocker cookbook that I swiped from my Mom a year before she officially gave it to me. The book automatically falls open to the chocolate chip cookie page everytime I open it.

Favorite Chocolate Chip Cookie Recipe

1/2 cup brown sugar
1/2 cup white sugar
1/3 cup melty butter
1/3 cup shortening
1 egg
1 tsp vanilla - cream all together
1 and 1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 package chocolate chips
Works everytime.

Spray the bottom of a cupcake pan with Pam or similar. Add chocolate chip cookie dough to the tops of the pans to form bowls.

Bake 375 F for 8 - 10 min.








They spread out a lot more then they did on Pinterest. I am going to have to do some more experimenting to get the right amount of cookie per pan space.


In my house, not only were we a bunch of raw dough eaters - a thing my husband finds detestable - but we also did not believe in waiting for anything to cool before eating it, so it was quite agonizing to wait 10 min for the cookie bowls to cool so they wouldn't fall apart.







At least the cookie bowls slid right off. That's a good sign.

Scoop chocolate mousse into cookie bowls

Chocolate Marshmallow Mousse
4 cups mini marshmallows
3/4 cup whole milk
3 oz bittersweet chocolate, chopped fine

Cook marshmallows, milk, and chocolate in a medium sauce pan over low heat, whisking constantly, until melted and smooth, about 4 min. Transfer mixture to larger bowl of ice water. Let stand, whisking often, until cool and thickened, 15 - 20 min. Fold in whipped cream. See below. Let set in refridgerator 6 hours before serving.



Add home-made whipped cream topping:

3/4 cup whipped cream
1 tsp vanilla
Whip on high 2 - 3 min until thick
Refridgerate


Top with raspberries.

Baked Ziti

This is my ode to Baked Ziti. J loves Baked Ziti. We've had it twice this week. My Aunt Leslie introduced me to Baked Ziti, it is her specialty dish. Now, I am making it mine.

1 lb (16 oz) ziti or similar noodle pasta - cooked and drained
1 package of sausage - Colosimo Italian is prefered - cooked until brown
Onions, garlic, peppers - saute with sausage.
Diced tomatoes and canned tomato sauce - heat all together and added spices - I prefer Italian seasoning, oregano, and basil.
2 lb Ricotta cheese + 1 lb mozzarella - mix together with a little bit of salt, pepper, and more Italian seasoning.
Butter a large baking dish.
Alternate layers of sauce, noodles, ricotta, and repeat. Bake uncovered 20 min at 350 F. Enjoy. We do not wait for it to cool.
