Honey and Cream Cheese Cupcakes


Honey Cupcakes
In a medium sauce pan on low heat melt together:
1/4 cup honey
1/2 cup butter (1 stick)
1/2 cup sugar
Mix together dry ingredients:
1 and 1/2 cup flour
1 and 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
Add honey-butter-sugar mix and add
3 eggs (room temperature)
5 Tbs whole milk.  Always cook with whole milk.  It tastes better.  Fat is flavor.  This recipe makes a little over a dozen cupcakes.
Cream Cheese Frosting
8 oz cream cheese (one package)
1/2 cup butter (1 stick)
2 tsp vanilla
5 - 6 cups powdered sugar
Heat cream cheese a bit and cream together with melty butter and vanilla.  Add powdered sugar until stiff yet spreadable.


A favorite of adults and two year olds alike.
